Day 235- Thankful for chocolate

I’ve loved chocolate ever since I can remember. I remember that when I was a child, if I received a lot of candy, I would dump out the candy as soon as it was allowed and start eating the chocolate. I didn’t really care much about the other candy, mostly just the chocolate.

At some point in my adulthood when sugar became more of a problem and I became lactose intolerant, I switched to dark chocolate.

I discovered dark chocolate covered almonds, and the rest is history.

For some time now, I have hardly gone a day without eating a handful of chocolate covered almonds. It gives me that little boost of energy, usually in the afternoon, and fills up that little bit of hunger when it’s not really time for the next meal.

Dark chocolate is actually very good for you; it’s the sugar and other things added that are not good for you.

Chocolate is such a delicious gift from God!

Today I’m thankful for chocolate.

I’m thankful that it is readily available in the stores.

I’m thankful that it is so delicious and that dark chocolate is good for our health.

    1. 😁 Ya, if I ate a whole bag I would feel so terrible. I put the bag on a high Shelf and take it down for less than a serving then put it right back up there. Out of sight, though not necessarily out of mind. It’s less tempting that way, though, and easier to listen to my body’s signals.

  1. I love chocolate, too, and since sugar makes my joints hurt 😒 I make my own, sweetened with stevia. I use organic cocoa powder, vanilla or almond extract, coconut oil, and either almond butter or peanut butter (the best for dipping banana slices in) so it’s very healthy. .. as long as I don’t eat too much! 😏 Happy to share the recipe, if you’d like.

I “guesstimate,” so it turns out a little different every time, but I take about 4 T coconut oil, warmed (liquid), and mix in about 3T almond butter, 1 T cocoa powder, 5-6 packets of Truvia, about 1/2 teaspoon vanilla extract and/or almond extract, and a pinch of salt. Mix well, pour onto a paper or plastic plate (flexible) and place in the freezer.* When hardened, break into pieces like peanut brittle and store in a zip-loc bag. You can add nuts or raisins, or anything else you like in chocolate. I like to freeze slices of banana and coat them with the chocolate mixture (I like to substitute chunky peanut butter) and put back into the freezer for a few minutes, then peel them off the plate and store them in a zip-loc bag.

        *Since coconut oil turns liquid at 76 degrees, this kind of chocolate needs to be kept cold. (Good thing. If I could take it with me in my purse, I would overindulge for sure!)
